西湖牛肉羹
原料:
牛肉一小块(我用的碎肉), 香菇2,3个,香菜一小把,鸡蛋清一个 。盐、味精、胡椒粉、生粉。
做法:
1、牛肉剁成小粒,冷水下锅,待水开洗去血沫盛出。香菜切碎。香菇切粒。鸡蛋只取蛋清,倒入汤碗内备用。
2、锅内水烧开,下牛肉粒和香菇粒,水开后再略烧一会儿,加盐、味精、胡椒粉。
3、用湿生粉勾芡后,倒入盛有蛋清的汤碗里,迅速搅拌均匀使蛋清成飞絮。
4、最后撒入香菜即可。
